Thirty Three Degrees is part of the East 33 group, the largest Australian vertically integrated producer, supplier and wholesaler of Sydney Rock Oysters. As the spiritual home of East 33, Wallis Lake is the home of some of our founding farms. If you gaze out over our deck onto the pristine waters of Wallis Lake, in the distance you will see the oyster leases where our farmers cultivate our Sydney Rock Oysters.
East 33 specialises in Sydney Rock Oysters, dedicated to showcasing Australia’s favourite native oyster at every opportunity. Sydney Rock Oysters are seasonal with different estuaries peaking in condition at different times of the year depending on the natural influences such as rainfall and moon cycles. Here in Wallis Lake, our oysters peak between September – May. Although East 33 owns farms in Wallis Lake and Port Stephens, we source our oysters from the length of the New South Wales coastline to ensure the best oyster experience every time.
